Quats sanitizer (in spray bottle, bucket and 3rd comp-sink) measured 200 ppm.
Temperature checks:
*Walk-in freezer was at -19 to -20 deg C.
*Walk-in cooler was at -1 to 2 deg C.
*Prep line cooler was at 2-3 deg C.
*Sandwich display cooler: deli meats = 3-5 deg C; sliced veggies = 4 deg C
*Hot holding for soup = 66 deg C.
*Beverage cooler was at 3 deg C.
*Temperature log was well maintained.
All foods in the dry storage were stored on shelves (off the floor).
Employees were observed washing hands and changing gloves.
