Comments

The floors in dishwashing and dry storage areas have been cleaned. Good.
No rodent dropping noticed at this time.
Preparation cooler across from the grill <4 degrees C.
Sliding door cooler below 4 C.
Raw poultry, beef and pork are now stored in the sliding door cooler.

Ensure all food items are still stored in bins with tight-fitting lids.

However the following items still require addressing( By August 21, 2018):

1. Clean thoroughly underneath and behind all equipment ( stove, deep fryers, ovens) and in staff washroom.
2, Remove debris and cobwebs from around the ice maker
3. Clean interior of the ice maker.
4. Clean the fan unit in the walk-in cooler.
5. Replace the broken shelving above the preparation areas.
6..Repair or replace all missing floor tiles.
7. Place rodent traps as per recommendations from a licensed pest control operator ( Submit work order by August 21).
8. Clean and degrease the sides of the deep fryers. Remove grease build up from in between equipment.
