Observation (CORRECTED DURING INSPECTION): No sanitizer prepared at the time of inspection.
Corrective Action(s): Prepare 100-200 ppm bleach sanitizer by mixing 1/2 teaspoon (1/2 cap) household bleach per 1L water. Ensure food contact surfaces are sanitized at least every 4 hours.

Observation: Food debris observed on floors underneath counters and equipment. Some ant activity observed.
Corrective Action(s): Clean up all noted areas. Mop floors with warm soapy water to deter ant activity. Seal cracks and holes if you notice them to prevent entry of ants and other pests.

Observation: High temperature dishwasher is unable to drain. Operator has contacted technician for repairs.
