Observation: Thermometers not available in reach in cooler and freezer. No probe thermometer available on site.
Corrective Action(s): Ensure that thermometers available to 1 degree C are available for all cold holding units. Ensure that an accurate probe thermometer is available for cooking and hot holding temperature checks. Date to be correted by: November 29, 2017.

- Reach in cooler at 4 degrees C
- Walk in freezer satisfactory
- Hot holding internal temperatures (chicken, gravy) at 60 degrees C or more
- Ice maker in sanitary condition
- Hand washing sinks supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Wiping cloths stored in bleach water sanitizer at 200 ppm chlorine
- No evidence of pest activity noted at time of inspection
- One employee on site stated she holds a valid FOODSAFE certificate. Please ensure that copies of all employees FOODSAFE certificates are kept on site for review by the Environmental Health Officer. To be verified.
*Note: Ensure that all food is kept at least 6 inches off the ground to facilitate proper cleaning and sanitizing.
