Observation (CORRECTED DURING INSPECTION): Dirty dishes were placed into the middle sink. However, the first compartment was filled with soap/water, and the 3rd compartment was filled with bleach/water (at 100 ppm chlorine residual).
Corrective Action(s): 1) Fill the sinks higher when filling with bleach/water and soap/water, enough to fully submerse your dishes.
2) Make sure staff are washing dishes properly. They should be not be putting dirty dishes in the "rinse" compartment. They sould follow the 3 compartment sink dishwashing method.

Observation: 1) Containers of spices on the wooden shelf (by the entrance to kitchen) did not have any lids/covers.

Comments

Note: next door area/unit has still not been completed. Operator has submitted application form (to change permit to include the next door unit address) as well as a hand drawn layout. As discussed, this area will just be used to seat/serve customers, and no prep will be done in the back room. There is a walk in cooler to store food in this back area. Walk in cooler at 3.9 deg C.

Routine inspection conducted:
Hot/cold running water, Liquid soap and paper towels available at all handsinks
All other temperatures satisfactory :
-Walk in cooler : 3.1 deg C
-Prep Cooler across cooking line: 3.8 deg C (ensure that inserts are not completely full so that you can use the food quicker)
-All other coolers at 4 deg C or less
-All freezers at -18 d deg C or less (including upstairs area)
-Bleach sanitizer in rag bucket at 100 ppm chlorine residual
-Dry storage area ok
-No signs of pests at time of inspection, continue your pest control visits
