All fridges are maintaining foods at 4 degrees C. or colder. Freezers are 18 degrees C. or colder. Walk in cooler and freezer are well organized with all foods date stamped. General sanitation is overall good. Dishwasher final rinse reached 76 degrees C. at the plate surface. Sanitizer in wiping cloth buckets measured 200 PPM quat residual. Liquid soap and paper towel at all handsinks. Temperature logs are being maintained. Ensure that there is a space for staff belongings so that they are stored separate from pizza boxes.
