Observation (CORRECTED DURING INSPECTION): Numerous hot foods on display were not kept at a temperature of 60C or greater. The following internal temperatures were recorded:
- sticky rice: 37C (stored at room temperature)
- baked bbq pork buns:33C (stored in hot case)
- baked chicken buns: 33C (stored in hot case)
- steam bbq pork, vegetable, and sweet buns (stored at room temperature)
Food products on display that was less than 60C for longer than 2 hours were discarded.
All hot foods must be stored at or above 60C. If food temperature is between 4C to 60C for longer than 2 hours, food products must be discarded.

Comments

Routine inspection conducted and the following were noted.
High temperature dishwasher achieved a final rinse temperature of at least 72C at plate level .
Walk-in cooler at 4C.
Front freezer units at -10C.
Buns stored in the steam were at least 60C.
Front cooler for eggs and sticky rice was at 4C.
Undercounter prep-cooler in the kitchen was at 4C.
Chlorine used as sanitizer and concentration was at 100ppm.
