Observation (CORRECTED DURING INSPECTION): Food items stored in domestic upright cooler were measured to be at 12C-13C.
Corrective Action(s): All meat items, dairy items, and sauces were discarded at time of inspection. Vegetables were relocated to walk-in cooler.

Observation: Small trays of vegetable toppings were stacked directly on top of one another with no lids.

Observation: Floors and walls under storage rack/shelving by back door require cleaning.
Floors behind cooking equipment and in hard to reach corners also require cleaning.
Interior of domestic upright cooler requires cleaning.
Corrective Action(s): Ensure all equipment is pulled out such that hard to reach areas can be properly cleaned on a weekly basis.

Observation (CORRECTED DURING INSPECTION): Newspaper was being used to line surfaces in some areas.
Corrective Action(s): Newspaper cannot be cleaned and sanitized. Discontinue practice - all surfaces must be non-absorbent, durable, and easily cleanable.

Observation: Upright domestic cooler was measured to be at 12C at time of inspection.
Corrective Action(s): Operator adjusted cooler temperature at time of inspection, however cooler temperature did not decrease by end of inspection. Repair cooler so that it is capable of maintaining temperatures at 4C or colder. Do not store any potentially hazardous foods in this cooler in the meantime.

Comments

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available in bucket at 200 ppm. *Reminder: sanitizer solution must be changed every 2-4 hours or sooner if solution becomes visibly dirty/cloudy.
- No cut vegetables/toppings were being held at on counter top at room temperature at time of inspection. *Reminder: if food is found to be held out at room temperature during future inspections, installation of a prep cooler will be required.
- Walk-in cooler was measured to be at 3C
- Freezer temperatures satisfactory. *Note: new chest freezer will be replacing one of the old freezers. Freezer arrived during inspection.
- High-temperature dishwasher reached 75C at plate surface during rinse cycle
- No improper thawing of fish was observed - good.
- Most food items were properly covered - ensure ALL stored food items are properly covered with tight-fitting lids/saran wrap/foil.
- No signs of pest activity noted at time of inspection. Last pest control visit was in March 2018; call pest control operator to continue monthly visits.
