Observation (CORRECTED DURING INSPECTION): The following containers of food items were stored at room temperature and discarded at time of inspection: salmon skin 24C, chicken katsu 32C, chicken wings 30C, beef 23C, bbq eel 24C, fried crab 28C, fried cod 32C.
Corrective Action(s): Ensure all cooked hot potentially hazardous foods are either cooked per order and served immediately or maintained at 60C. Discussed options with manager. Intent of these foods is to serve throughout ordering period and not to cool for later use. Operator to obtain a proper hot holding unit. A follow up inspection will be conducted to verify. Correction order issued.
