Observation: Large chopping board was being stored on the floor between the dishwasher and prep sink.

Corrective Action: Do not store food contact surfaces on the floor to prevent contamination. Ensure chopping board is washed and sanitized with 100ppm chlorine before it is used for food preparation and find new place to stroe chopping boards in the future.

Observation: (1) Carton of eggs in back cooler stored above ready to eat items.

Corrective Action: Eggs and raw food items should be stored below cooked and ready to eat items to prevent contamination

(2) Rice and other food items were stored on the floor in the dry storage area in non-pest proof bags (original containers)

Corrective Action: Ensure all food items are stored 6" off the ground to prevent contamination by pests and to allow for better organization and maintaining sanitary conditions
Reorganize the dry storage area so all food items are off the floor.

(3) Scoops for rice and sugar in dry storage were stored in the bins

Corrective Action: Ensure all scoops are removed from food bins after use to prevent contamination of food items.

Observation: (1) Duck tape and tin foil used on the lids of rice cooker around the handles.

Corrective Action: Remove duck tape and tin foil from lids and replace handles. Duck tape is not a food grade material and can not be properly washed and sanitized

(2) Soup holding-unit had a plastic knife tapped on the lid as a handle.

Corrective Action: Replace handle on lid and remove plastic knife. The plastic handle is not of durable material and cannot be properly washed and sanitized.

Recommendations
Brown rice for sushi measured at pH 5.0. Ensure the rice is discarded after two hours if it is not hot held at 60C or above recipe to ensure pH is at 4.2 or below.
This is a repeat violation from previous inspections.

Handwashing stations and washroom had hot/cold running water, liquid soap and single use paper towels.
Coolers all measured at 4C or below and were equipped with thermometers.
T-Fal fryer had tempura shrimp measured at 93C. (Ensure food is not stored in this unit as it is not a hot-holding unit that can maintain 60C for food items)
Miso Soup in hot-holding unit measured at 65C
Chlorine sanitizer in spray bottle measured 71-72C at the plate level after the final rinse.
No signs of pests at time of inspection
General Sanitation is good (More organization in dry storage area is needed.)
Freezers all measured at -18C or below
White Rick pH was tested at 4.0
