Follow up to Rpt # DFOR-AQFUFZ. - Wiping cloths stored in bleach sanitizer at 200 ppm. Chlorine test strips available on site. - In use utensils are stored in ice water - Operator has obtained three ice wands and multiple shallow containers for proper cooling of potentially hazardous foods. Ice wand in use at time of inspection. - New thermometers accurate to 1 degree C available for prep line coolers - Most areas noted on previous routine report have been cleaned. Note: Cleaning required behind ice machine and hard-to-reach areas. Please ensure that cleaning of specific equipment/areas is incorporated into routine cleaning schedules to limit build up of food debris and/or grease.
