Product labeled with dates and FIFO protocol followed - Walk in Freezer -23 C - Prep coolers 4 C or less - Hot units greater than 60 C - Temperature logs maintained and recorded in log book - Ecolab lactic acid sanitizer within acceptable parameters in spray bottles and 3 compartment sink dispenser - General sanitation is satisfactory - Hand sinks supplied with hot/cold water and liquid soap/paper towels - Dishwasher final rinse at plate level 78.3 C - Bar glasswasher greater 12.5 ppm iodine - No evidence of pest activity - Pest control contractor monitors facility
