Observation (CORRECTED DURING INSPECTION): 1. Quaternary ammonium compound (QUATS) sanitizing pail was measured at 100 ppm at the front-of-house at time of inspection.
2. The vegetable cutter contained vegetable debris after being put away underneath the preparation table.
Corrective Action(s): 1. QUATS sanitizing pail was replaced at time of inspection from the dispenser, measuring 200 ppm QUATS.
2. The vegetable cutter was run through the three-compartment sink to be washed, rinsed, and sanitized at time of inspection.

Ensure that all food contact surfaces are properly cleaned, and then sanitized at 200 ppm QUATS to reduce bacteria and viruses that could cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): The condenser area underneath the prep cooler at the front-of-house leaks water. Existing packaged items such as napkins and bags were removed from the area to avoid contamination.
Corrective Action(s): Adjust or repair the prep cooler so that it no longer drips water underneath. Equipment must be kept functioning in good working order.

Comments

A routine inspection was conducted of the facility. The premise is generally well maintained in good sanitary condition, with a COVID-19 plan present. The following was noted at time of inspection:

1. Temperatures
- All temperatures met health requirements
- Walk-in cooler at 4C (Requirement: 4C or less)
- Walk-in freezer at approximately -18C (Requirement: -18C or less)
- Sandwich topping cooler at 4C (Requirement: 4C or less)
- Hot-held meatballs were internally probed at 77C (Requirement: 60C/140F or above)
- Temperature logs are well maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- 3-compartment sink present with integrated drain plugs. Reminder: All products to be air-dried should be staggered, not stacked, on top of each other
- Sanitizer dispenser releases 200 ppm quaternary ammonium compound (QUATS) at time of inspection. QUATS test strips available - note that all staff members should be aware of where the QUATS test strips are located. Sanitizer logs present and were noted daily
- Rotary cutter was stored in good sanitary condition.
- Mop sink present at back-of-house is well organized, floor is routinely cleaned and mopped

3. Storage Practices
- Food products stored at least 6" off the floor and were covered with food-grade saran wrap when not in use
- Ingredients inside of the walk-in cooler were dated, FIFO system employed

4. Pests
- No evidence of recent, visible pest activity noted at time of inspections
- Cabinets were well organized and maintained in good sanitary manner, no debris or grime noted
- Back door was tightly sealed, no pest entry points observed

5. Administrative
- Food service supervisor has FoodSafe 1 certification (Expiry: February 2023)

6. Please also note the following:
- Packaged chemicals stored above boxes of soda syrup feeding into soda fountain line. Move sanitizers / cleaners away from the soda syrup to avoid potential contamination
