Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Three compartment sink set-up lack sink stoppers. Only one stopper available. Staff fill and empty sinks individually to accomodate single stopper. Limited space for adequate air drying also noted. Storage shelves are full of dishes and sink is full of cleaned dishes.
Correction: Immediately acquire three proper sink stops to perform proper dishwashing as discussed. Construct additional dish daying storage capabilities to ensure build-up of dishes in the sinks doesn't occur. Send picture of sink stoppers within 24 hours.
This will be reviewed at follow up inspection date noted.

Additional sink plugs obtained. Premises now has three sink stoppers to perform proper manual dishwashing.
Manager stated additional (free standing) shelving unit to come to provide additional dish storage and air drying space. This should also prevent the build up of drying dishes in the third sink. Make sure staff are properly trained on three sink manual dishwashing methods.
Enhanced cleaning has taken place and the donut shelf wheel fixed to allow easier movement for cleaning purposes.
I will return on noted follow up inspection date for comprehensive cleaning review.
