Observation: - Food debris/grime noted on top of dishwasher
- Dust accumulation noted on canopy above dishwasher
- Grease/dust accumulation noted on exhaust canopy over cook line. Decal indicated it was due for service last month.
Corrective Action(s): - Clean all areas above. Ensure regular cleaning schedule is adhered to. Ensure cleaning frequency is sufficent to keep areas in sanitary condition.
Note: Manager reported exhaust canopy is scheduled to be serviced next week.

Comments

- Premises and equipment maintained in sanitary condition (with the exception of areas noted above)
- Designated handwashing stations supplied with hot and cold water, liquid soap and paper towel. Observed frequent handwashing by foodhandling staff.
- Coolers operating at acceptable temperatures (4C or colder):
- Walk-in cooler 3C
- Quest undercounter (drawer) cooler 4C
- Habco glass door beverage cooler 4C
- Walk-in cooler organized with raw meat stored away from and below ready to eat items. Food was covered/wrapped to protect from contamination.
- Freezers were maintaining products in a frozen state
- Walk-in freezer -15C
- Chest freezer -18C
- Cooking and cold storage temperatures are checked and recorded. Records up to date.
- Ice machine appears clean/maintained. Scoop stored in a sanitary manner.
- High temperature dishwasher operational. Final rinse measured 74C. Rinse temperature is monitored by staff using external gauge.
- Quats sanitizer present for sanitizing food contact surfaces. Concentration of solution in buckets measured 200ppm. Test strips present.
- No signs of pest activity noted at the time of the inspection.
- Executive Chef (Manager) present and has completed Foodsafe level 1.
