Observation (CORRECTED DURING INSPECTION): Noted reusable wiping cloths being used. Sanitize in service area is stored in spray bottle.
Corrective Action(s): Keep all reusable wiping cloths stored in sanitizer solution to prevent microbial growth or use single use paper towel to wipe counters.

Observation: A) Noted heavy dust build up on display ladder in back food preparation area.
B) Scoop for ice was stored in the ice
Corrective Action(s): A) Clean ladder and remove dust build up. Ensure display ladder is cleaned routinely or remove as dust build up can lead to potential contamination of food.
B) Do not store scoop for the ice in the ice. Keep scoop for ice stored outside of the ice in a separate container to protect the food (ie. ice) from contamination via employee hands.

304 - Premises not free of pests [s. 26(a)]
Observation: Noted a few mouse droppings under the shelving units along the permitter of the wall in the dry storage area.
Corrective Action(s): Clean up all droppings and monitor for new activity. Locate and seal all entry points. Report any new activity to pest control technician.

All hand wash stations fully equipped with soap, paper towel, hot and cold running water.
All coolers 4⁰C or less (display case, upright two door, domestic refrigerator..etc)
Freezers all -18C or less.
Hot holding of soup 63C
General sanitation satisfactory.
Screen was in place over open back door at time of inspection.
Meat slicer was stored away and appeared clean at time of inspection. Ensure taken apart and thoroughly cleaned and sanitized after each use.
Ice machine appeared clean.
Quat sanitizer at source and in spray bottle with cloths submerged 200ppm.
High temperature dish washer achieved 71⁰C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered..etc)
