Comments

Mew with owner yesterday and they were busy during the lunch time, so I came back today.

High temperature dishwasher reached 84C at the final rinse cycle.
Daily temperature logs are available.
Accurate thermometers are placed in each coolers.
Bleach used as approved sanitizer

Suggestion:
Black moldy walls in the back/receiving area need to be treated and than repainted. Mold will affect the food quality of your food.
Also, if you are planning to keep this facility open as a food serving restaurant some improvements need to be done in the future ( such as floor to be replaced, food contact surfaces to be resurfaced, washroom and serving customer's area to be updated ).
