Observation: Back door sweep is missing and needs to be replaced.
Corrective Action(s): Ensure back door sweep is sufficient to prevent potential pest entrance. New door sweep was ordered but was not the correct size. Facility is waiting for proper door sweep to arrive.

Observation: Handwash station and 2-compartment sink taps are leaking water.
Corrective Action(s): Service sinks and ensure all equipment is maintained in good working order.

Comments

-Walk-in cooler was a 4C.
-Walk-in freezer was at -18C.
-Front milk cooler was at 1C.
-Burger freezer was at -11C.
-Ice cream freezer was at -18C.
-Hot holding was greater than 60C.
-Onions are reheated on the flat top and were greater than 71C
-Gravy is made daily and was hot held at greater than 60C..
-Potentially hazardous condiments stored at room temperature are time tracked. Items are discarded after 2 or 4hrs.
-Temperatures are checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizing dispenser was tested at 200ppm.
-Sanitizer pails were properly labelled and tested at 200ppm. Sanitizer pails are changed every 2 hours or more often as needed.
-Foods properly stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Staff member had valid FoodSafe Level 1 (February 6, 2023) .
