Observation (CORRECTED DURING INSPECTION): Observed a mixture of water and sauce paste at room temperature. When inquired, operator indicated that it is a base for sauces like chutny. Initially, hot water was used to soften the paste. Once cooled, it should be in a cooler at 4 C or lower.
Corrective Action(s): Required to move the sauce into the walk-in cooler. Ensure to store all cold potentially hazardous items in a cooler at 4 C or lower. Operator transferred the item into the walk-in cooler at the time of inspection.

Observation (CORRECTED DURING INSPECTION): 1. Observed a garbage bag stored on top of a prep table. Garbage bags may contain chemicals and other contaminants harmful for human consumption.
2. A batch of food, pasty mixture of water and what seems to be similar to flour, was stored on the floor under a prep table. The batch was covered with seran wrap.
Corrective Action(s): Required operator to remove the garbage bag and to store them away from foods at all times. The batch was also moved to a storage table. Ensure to store all foods off the floor. Operator completed corrective actions at the time of inspection.
