Observation: Fennel sausages purchased raw then baked in oven prior to slicing and freezing for future use.
Corrective Action(s): Fennel sausages when cooked in oven must reach an internal temperature of 74 C or hotter to be considered fully cooked.

Staff to check cooking temperature of sausage using a probe thermometer.

Observation: Software system for time monitoring of ambient temperature displayed pizza is currently unavailable due to system updates.
Corrective Action(s): All pizzas displayed at room temperature must be monitored for a maximum of 2 hour shelf life before unsold product is to be discarded.

Until software system is functional, all pizzas are to manually monitored for shelf life by staff.

Observation: Front service area handsink - papertowel dispenser has broken off the wall.
Corrective Action(s): Re-install papertowel dispenser by handsink to allow staff to conduct conventient and correct handwashing method.
