Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: A staff memeber was observed rinsing utensils in the mop sink.
Correction: Do not use the mop sink for washing, cleaning and sanitizing utensils. Wash and sanitize the utensil in the dishwasher if soiled.

Follow up inspection conducted:
All moldy wooden serving boards have been replaced with new serving dishware that are non-porous, smooth, and easily washed.
Wiping rags stored in chlorine solution.
Mop bucket no longer stored in kitchen and no fruit fly problem noted.
Cleaning under food preparation table, front prep-cooler, and area around mop sink & dishwashing area have been cleaned.
Ice-machine has been cleaned.
Front prep-coolers equipped with thermometers.
