Observation (CORRECTED DURING INSPECTION): Refer to Code # 308:
-Foods in the top portion of the cooler kept in ice bath but the containers are being overfilled; top portion of the food is maintained at 10~12 C where the bottom of the container is at 2-4 C
Corrective Action(s): Required operator to have only smaller portions in the prep cooler until its repaired/replaced. Ensure to replenish ice frequently.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): wash and sanitize compartment of three-compartment sink filled at the time of inspection; but the sanitizer had run out so that no sanitizer was present in the sanitize compartment. Operator stated that the QUAT sanitizer bottles are ordered every week. Sufficient supply of bleach available onsite
Corrective Action(s): Required operator to use bleach (1 cap full per 1 gallon of water) until new order of QUAT comes in. Operator filled the 3rd compartment and used 5 caps full of bleach; detected 200 ppm of residual chlorine.

Observation: Observed dust build up on the cooling fan in the walk-in cooler. Several baskets of fries stored in walk-in cooler without proper coverage.
Corrective Action(s): Required operator to clean the cooling fan and provide appropriate covers for fries

Observation: Prep cooler at the front not able to maintain 4 C or lower; temperature measured in the bottom compartment at 15-16 C; top prep compartment was filled with condiments and sauces where ice water bath was prepared until cooler is being repaired/replaced. Temperature of the food products at 4-5 C; ice was present at the time of inspection.
Corrective Action(s): Required operator repair/replace cooler so that the temperature is kept at 4 C or lower at all times
