Observation: Walk-in cooler noted at 10 C. Indicating gauge on unit functioning. Discussed with staff and have called for service tech. Due to come today.
Correction: Service unit immediately. Get service tech on-site today. Move potentially hazardous foods to alternate cooling units and/or freezers as discussed. Broths in cool-down process can continue to cool using ice bath method. Fill prep sink with ice and water and insert broths to facilitate cooling until unit is fixed or until 4 pm today. Discard broth if unit service not completed today or put broth in freezer until unit is fixed. Discard any remaining potentially hazardous foods that can't find immediate alternate cooling arrangement.
This unit will be audited on re-inspection date noted on report.

*Make sure to check the dishwasher daily* - Look for sanitizer in the feed lines (make sure no air or air gaps in system) at the beginning of the day, and on set intervals through the day; test with chlorine strips regularly.
