These foods must be discarded after the time threshold reached. - Cooling units all measuring less than 4 C. - Hot holding units all above 60 C. - Dishwasher at 77 C and sanitizer concentrations 100 ppm - chlorine. - Handwashing facilities ok. - Temperature monitoring/recording in place - Recommend twice a day monitoring.
