Observation (CORRECTED DURING INSPECTION): Noodles were being cooled in large batches at room temperature.
Corrective Action(s): Food MUST be cooled from 60-20C in 2 hours or less, and from 20-4C in 4 hours or less. Separate foods into smaller containers and place them in the cooler to faciliate cooling. Staff moved the noodles to the cooler at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Utensils were found in the handwashing station near the ice maker.
Corrective Action(s): Keep the handwashing station clear at all times. It is only to be used for handwashing and nothing else. Staff moved the utensils at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Frozen shrimp were found to be thawing in a bucket of water underneath the cookline. Frozen meat was thawing in a bucket near the walk-in cooler.
Corrective Action(s): Frozen foods must be thawed out in the cooler, or under cold running water. This is a repeat violation. Staff moved all the foods to the cooler at the time of inspection.
