Observation: - Mouse droppings noted on wooden dolly which was stored under 2 door upright freezer. Droppings appear to be from past rodent activity and have therefore been coded as a sanitation issue.
- Miscellaneous debris and spills noted on floor under 2 door upright freezer.
Corrective Action(s): - Clean areas noted above to remove all debris and droppings. Use a bleach solution to disinfect areas where droppings were. [Correction date: 1 week]

Comments

- Handsinks in back prep area, front service area and staff/public washrooms were supplied with hot and cold running water, liquid soap and paper towel
- All coolers were operating at acceptable temperatures (4C or colder):
- Prep cooler 2C
- Sliding door cooler 4C
- Under counter Danby coolers 4C (right), 3C (left)
- Display cooler 4C
- Barista cooler 3C
- Small under counter Hamilton Beach cooler 2C
- Freezer temperatures were -15 to -24C.
- High temperature dishwasher was operational. Final rinse measured 71.9C at dish surface.
- Bleach sanitizer solution was present in spray bottles and buckets. Concentration of solutions measured 100-200ppm chlorine
- Operator present and has valid Foodsafe level 1 certification (valid until January 2024)
- Food premises organized with all food items stored on shelving (6" off of the floor).
- Glue traps present for monitoring pest activity. Continue to keep floor area clear to facilitate cleaning and monitoring.
