302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The sanitizer solution with the wiping cloths in the bar area had no bleach in it.
Corrective Action(s): Always store wiping cloths in a bleach solution (1oz per ga water). Get a spray bottle for the bleach solution and use this in the kitchen as discussed.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings observed on shelving where dry storage bins are stored.
Corrective Action(s): Remove all the bins and clean the area using bleach. Provide copies of the pest control reports from the previous two visits.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: The back door was open at the time of the inspection.
Corrective Action(s): If you want to keep the back door open, then you need to install a screen door. This is a repeat offense, and if it's coded again, a Correction Order will be issued.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning required.
Corrective Action(s): Clean under the cooking equipment, in the dry storage area. Clean the food spills in the sliding door cooler by the pizza oven.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk-in cooler was at 8 degC. Operator mentioned that it might in a defrost cycle. He called the repairman during the inspection and the person will be coming today to have a look at the cooler.
Corrective Action(s): Monitor the temperature. Get it fixed so that it maintains a temperature of 4 degC of below. This is the third time that this infraction has been coded. If this continues and the walk-in cooler can not consistently maintain a temperature below 4 degC, then you will need to look into a more permanent solution.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: There's no cold running water at the RIGHT faucet or at the staff washroom tap. The rest of the taps have hot and cold running water.
Corrective Action(s): Get this issue addressed. Provide hot and cold running water at all the taps.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: There was no thermometer in the walk-in cooler.
Corrective Action(s): Get a thermometer for the walk-in cooler and any other coolers that don't have one.
