Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
The low temperature dishwasher had a [Cl2] of 0ppm during the rinse cycle. Dishes are not being sanitized. There is only a 2-compartment sink available for warewashing.
Correction:
Immediately stop using the dishwasher and call a repair company to fix the dishwasher. Increase and maintain the [Cl2] between 50-100ppm. Immediately stop dine-in service and only offer take-out, as there is inadequate warewashing facilities. Manually warewash cookware using the 2-compartment menthod until the dishwasher is fixed. Contact our office when the dishwasher is fixed, to schedule a follow-up inspection.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
Paper towel missing from hand washing sinks in the kitchen. Staff are not able to properly wash and dry their hands.
Correction:
Immediately refill the paper towels dispenser, and place paper towels at each hand sink (waitress area and 2 in kitchen).

A follow-up inspection was conducted, the following observations were made:
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle. Owner explained that the sanitizer had expired and was not strong enough. A new bottle of sanitizer in use.
- Dine-in service can be offered and the dishwasher can be used to wash and sanitize dishes.
- All hand sinks had liquid soap, paper towels, and running hot and cold water.
- U/c cooler, across from the deep fryer was 52F, this is too warm, the temperature must be below 40F. Do not store proteins in the cooler until it has been fixed and can maintain 40F or colder.
- Some cleaning was done, but more to be completed.
- Ensure a professional pest company is called in to treat for the flies and continue to clean all areas and surfaces. There should NOT be any surface that is slippery or sticky with grease and food debris.
- A follow-up inspection will be conducted next week to ensure all other items have been corrected.
- Discussed the inspection results with the owner, no signature obtained due to the pandemic.
