Observation:
1) Sanitizer measures 100ppm quats at the wall dispenser. Verified by both operator and inspector's test strips.
2) Interior of ice machine has minor biofilm build up
Corrective Action(s):
1) Have sanitizer dispenser repaired so it dispenses 200ppm quats. Chef stated that they will use a 100ppm bleach sanitizer in the mean time (5mL unscented household bleach in 2.5L of water).
2) Clean and sanitize interior of ice machine.

Comments

General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- high temp dishwasher reached 73C
- foods date labelled
- proper thawing observed (large bucket of soup in ice water bath, stirred frequently)
- ensure dipper well is on when ice cream scoops are being used (no service at the time of inspection)
- general sanitation is satisfactory
- no obvious signs of pests

- walk-in cooler: 3C
- walk-in freezer: -14C
- prep drawers: 4C*
- mini-fridge/freezer: 4C/-18C
- ice cream freezer: -15C
- food in steam baths measured >60C
- temperature logs available for review

* Prep drawers slow to cool; please monitor closely and repair as needed. Food is not kept in this unit overnight.
