Observation: Observed excessive food debris accumulating in following areas:
- floor under counter in front bar area;
- floor under dry food storage shelving unit and rolling bins (walls too);
- Floor under raw meat section of walk-in cooler (raw meat juices or similar);
Corrective Action(s): Clean and ensure these areas, especially behind legs of these shelves ad counters do not allow the accumulation of food debris. Increase frequency or quality of cleaning. Discussed.

Observation: Water (waste water) leak observed below front utility sink, likely coming from one or more points along the drain line. Leak extending along the shelf below.
Corrective Action(s): Fix leak immediately. Pull all equipment and food storage containers from shelf and ensure they are properly disinfected. Do the same for the shelving unit and floor below in this area. Work must be completed by follow-up inspection date noted on report.

Comments

A barrier is needed between the kitchen handsink and work shelf to the left which houses many open sauces etc., or move open food away from this area. Stainless steel sheet 12 to 15 inches above basin lip should be sufficient to deflect water droplets from handsink. Develop a plan for this long-term fix. Until then ensure all food is covered.
