Observation (CORRECTED DURING INSPECTION): Approximately 2 lb of lightly cooked bacon was observed in an insert on the countertop. Internal temperature 21 Celsius. No time tracking available.
Corrective Action(s): Bacon discarded.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): White domestic upright "Inglis" fridge is maintaining foods at approximately 7 Celsius. Operator turned dial up to reduce temperature.
Note - it is not acceptable to only measure temperatures in the coldest part of the fridge. ALL of the food in the fridge must be maintained below 4 Celsius.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A very dirty cloth was observed being used to wipe food prep surfaces including the sandwich board on the prep fridge. No prepared sanitizer was available, and no sanitizer (bleach) was detected on the cloth. When asked, workers indicated that no sanitizer had been prepared. Sanitizer was prepared at that time.
Corrective Action(s): Always have sanitizer prepared for easy use, and do not wipe any food prep surfaces without it. Keep all cleaning cloths in sanitizer between uses.
This violation has been noted on previous inspections.

Observation: Yo' Mama jams are stored (sealed) below the cash register. Open jars noted in undercounter fridge by coffee machine.
Operator noted that these were not for sale, and were not used in the restaurant, however there is advertising on the wall for Yo'mama jam to be served with any meal. (Picture taken.)
Corrective Action(s): All Yo'mama jam is to be removed from the establishment until it is proven with lab tests to be shelf stable. This item has been noted on at least two previous inspections and failure to comply will result in progressive enforcement.

Observation: Employee observed drinking personal beverage in food prep area; beverage stored on food prep surface.
Corrective Action(s): Keep all personal beverages and items in an area separate from the food and dishes for the facility.

Observation: No temperature records are kept for fridges. This has been noted on previous inspections.
No time/temperature logs kept for room temperature cooling.
If you use room temperature cooling you must have a verifiable method of tracking the time.

Observation (CORRECTED DURING INSPECTION): Back door observed propped open at time of inspection. This could allow the entry of pests. This has been noted on previous inspection reports.
Corrective Action(s): Keep back door closed or install a tight-fitting screen door.

Observation: Numerous shelves and tops of fridges, etc used for storing dishes and equipment are dirty.
Most floor spaces under and behind equipment are dirty. Clean these areas.

Comments

Most fridges were 4 Celsius.
No sign of pests were noted.
Hand washing sink was stocked.
Note that a lot of grease-laden vapors are being produced. Discussed with on-site staff - to be referred to fire department.
