Checked out garbage area. Looks clean and well organized.
Cooling units less than 4 C
Freezers below -18 C
Hot holding above 60 C.
Handwash stations good.
Quats sani-buckets good (200 ppm)
New sheet metal installed below deep friers and along entire length of cook station. Looks good. Will help prevent floor damage (especially to tiles) during oil filtering/change process.
Note:
Grease trap lid is slightly loose, is dirty around the edges and there seems to be sewer-like gases or smells escaping. Recommend a couple of things at time of next scheduled cleaning:
- Have lid edges cleaned (either outside with hose at hose bib, or in the triple sink using the sink sprayer and degreaser).
- Ask service provider about improving the seal around the lid to ensure no gases escape into the premises work area.
*Take necessary action to eliminate the gases from escaping the grease trap into the working area of the premises.
