Observation (CORRECTED DURING INSPECTION): Noted the black and white pearls were left at the counter over 2 hours.
Corrective Action(s): Time tracking was availble by labelling the time of production. However, no corrective action was followed. Discard cooked pearls after 2 hours at room temperature. Pearls were discarded.

Observation (CORRECTED DURING INSPECTION): Noted the sanitizing step was not followed properly after washing and rinsing utensils
Corrective Action(s): Ensure to fill one compartment @ 2 comp sink with 100ppm Cl bleach water all time. All kitchen utensils must be sanitized by soaking in at the sanitizing compartment for 2 minutes after washing and rinsing. Air dry after sanitizing. A correction order was issued
