Observation: Build up of grime/mildew like deposits observed on the metal panel inside ice machine. This surface comes in direct contact with ice and can cause potential contamination of ice.
*Please note that it is a REPEATED VIOLATION and failure to comply in future may result in further enforcement.
Corrective Action(s): Remove ice then clean and sanitize the ice machine as per the manufacturer's directions to prevent build up of mould/mildew inside the ice machine.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 0ppm concentration of DDBSA based sanitizer recorded for multiple sanitizer bottles. Automatic dispensing unit was used to fill these bottles. Concentration recorded at the dispensing unit was 0ppm. Manager called the technician to service the dispensing unit and will have it repaired by the end of the day. 200ppm bleach solution was prepared at the time of inspection and all the spray bottles were refilled.
Corrective Action(s): - Ensure that an approved food grade sanitizer is available during facility operation to adequately sanitize all the food contact surfaces/equipment.
- Sanitize all the prep tables/food contact surfaces with 200ppm bleach solution.

Observation: Few rodent droppings observed in one corner of dry storage area under the shelving unit.
Corrective Action(s): - Please remove the rodent droppings and disinfect the area with 1 part bleach to 9 part water solution.
- Notify your pest control company about the affected area to implement control measures.

Comments

Routine inspection conducted.

Findings:
- Temperature of all coolers recorded at or below 4C
- Temperature of freezers at or below -18C except 1 under counter freezer at -9C
- Handwash sink available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 2x high temp mechanical dishwasher available and recorded at a temperature of 71C or above on dish surface during rinse cycle.
- Glass dishwasher used in bar area and iodine concentration recorded at 12.5ppm.
- Sanitizer spray bottles available throughout the facility. See violation above.
- Food storage practices were satisfactory.
- Staff has valid FOODSAFE Level 1 certificate (Exp Oct, 2024)
- Pest Control Company conducts routine inspections.

A follow up inspection will be conducted.
