- All freezers ranged between -13C to -22C.
- Hot held items (sauce, soup, rice) measured at 60C or above.
- Bleach sanitizer measured 200ppm.
- Chlorine measured at 50ppm from final rinse water for low temperature dishwasher.
- Frozen salmon was being thawed under cold water at the time of inspection - good.
- No signs of pest observed at the time of inspection.
- Ice machine in sanitary condition. Scoop held on a holder inside the machine.
- Overall sanitation is good.

*Ensure to keep the slide doors on the sushi display cooler. Do not take them off during rush hours.
*Clean the slide door cooler inside kitchen - clean the fan & racks.
*Operator's Foodsafe level 1 expired - retake the course or the equivalent.
