Observation (CORRECTED DURING INSPECTION): Display cooler at 7C. Move food to another cooler that works at 4C or below at time of inspection. Operator indicated that cooler was cleaned that's why temperatures were a little higher.
Corrective Action(s): Do not place foods back into cooler until it capable of maintaining foods at 4C or below.

Observation (CORRECTED DURING INSPECTION): The sinks were used to cool foods in ice bath. The other small sink in the middle of kitchen was blocked with an object. Sinks were missing one of the following: liquid hand soap or paper towels (too far). Designate the sink closest to the entrance at the hand washing sink. Paper towels were not within reach, placed the roll of paper towels nearby (temporary). Food items cooling moved out of the sink and separated into smaller containers and placed on ice bath. This sink cannot be used for any other purposes but to wash hands.
Corrective Action(s): Dispenser to be installed on the wall at the sink.

Observation: Drinking glasses were stored in paper cardboard boxes at the front. Cardboard is not suitable for use in the kitchen as it cannot be easily cleanable.
