Observation (CORRECTED DURING INSPECTION): a.) No sanitizer noted in rince cycle. Dishwasher not properly primed or feeding sanitizer properly. B) Sanitizer spray bottle or bucket not in use for spot sanitizing. Work surfaces not regularly sanitized.
Corrective Action(s): A) Dishwasher requires daily check for function and primed prior to the start of daily operations. Adequate chlorine strips must be available and used daily. Have present for follow up inspection.
B) Have 100ppm bleach solution (in spray bottle or bucket) available at all times in premises for spot cleaning/sanitizing.
