306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is accumulated food debris on floors under prep tables, equipment, and shelving racks in the kitchen and walk-in-cooler. There are food stains on the walls of the walk-in-cooler, behind the containers of curry sauces. This will attract pests.
Corrective Action(s): Staff shall scrub the floors under shelving units, prep tables and equipment. If staff are unable to do so, adjust lower shelves so they are at least 6" above the floor, so a mop can fit under them. Move prep tables and machines so staff can clean the floor under them.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: The owner/operator does not possess a valid FoodSafe Level 1 certificate, or equivalent course/certificate. The owner MUST successfully complete the course so they are able to monitor and train staff in the safe processing of food. This was mentioned in the previous inspection.
Corrective Action(s): The owner/operator shall successfully complete the FoodSafe Level 1 course.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: At time of inspection, there were no staff that possessed a valid FoodSafe level 1, or equivalent course/certificate. There MUST be at one staff member working at all times, that possesses a valid FoodSafe certificate, so they can ensure food is being processed safely.
Corrective Action(s): Immediately have staff take the FoodSafe Level 1 course and successfully complete it. Ensure to schedule at least one staff member, who possesses the certificate, to be working each day and each shift.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- Low temp dishwasher had a [Cl2] between 50-100ppm during the rinse cycle. Test strips present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitizer in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; foods stored in groups with proteins stored separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has improved, good job. Improvement needed in the mentioned areas.
- No signs of pests.
- Dusts was removed from the ceiling and upper walls, and no accumulation has occurred.
