308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Prep cooler is still not working. No food was being stored in bottom portion of this cooler. Corrective Action(s): Technician had been on-site (invoice available for review), however a new compressor had to be ordered. Operator stated the technician will be back on January 26th to service the cooler. Correct by: January 26, 2018 Violation Score: 9

- Follow-up inspection to occur next week - Inserts for non-working prep cooler were stored in ice at time of inspection - good. Continue storing all inserts in ice until cooler has been repaired. Reminder that inserts must be only 1/3 full to ensure food in inserts are used up within 2 hours (or discarded). Corrected items: - Walk-in cooler has been reorganized, good separation between raw and ready-to-eat foods. All food items were properly covered - Ice machine has been cleaned and sanitized. Reminder to do this at least once a month - Ventilation exhaust canopy was turned on - good. - Dough machine is now maintained in sanitary condition - Dry ingredient storage bins have been cleaned and sanitized - Walls, backsplashes, and floors have been cleaned - good - Hand sink was easily accessible by staff. Paper towel dispenser working properly - Bleach sanitizer solution available at 200 ppm in spray bottle and in bucket for storing wiping cloths - good. Spray bottle is properly labelled. - General sanitation excellent at time of inspection - please maintain this level of organization and sanitation!
