Observation (CORRECTED DURING INSPECTION): Spray bottles with QUAT sanitizer measured about 50ppm.
Corrective Action(s): QUAT sanitizer bottles was refilled from refill unit, remeasured to 200ppm.
Ensure that old QUAT sanitizer is poured out from bottle and refilled from new.

Observation: Cooler with sliding door, back of the kitchen, does not have thermometer.
Corrective Action(s): Ensure that an accurate thermometer is kept on the inside. This is to help monitor the temperature of the refrigeration unit, which must be maintained at 4C or less.

High temperature dishwasher reaching greater than 71C at the plate level. Reading at time of inspection was 74C.
