Routine inspection conducted with the presence of one staff.

- General sanitation was OK.
- Hand sink was equipped with hand soap, paper towel and hot/cold running water.
- Staff was making pizza. With probe thermometer, Prep cooler top cheese and chopped green pepper 3.8C. The bottom temperature 4.7- 7.9 C *
- Walk in cooler 4.0C; Upright freezer -18.0C; Chicken freezer at the back -22C. Upright cooler 3.8C.
- Bleach solution in the bucket measured 200ppm.
- Washed and sanitized tongs, knives and cutting board every 2-3 hours throughout the day.
- 3-compartment sink was ready for cleaning and sanitation purpose. staff knows how to sanitize utensils in the 3rd compartment sink.
- Back door closed tight without pest entry points observed.

Note: (1) add one bucket with bleach solution at the front food processing area.
(2) adjust the prep cooler temperature, keep the temperature at 4C or below.
(3) Discard the unused equipment, e.g. the hot holding unit on the pizza cutting table.
(4) Book a drain cleaning as there is strong odor.
