Observation: Ice machine due for cleaning as per cleaning schedule.
Corrective Action(s): Ensure to wash and sanitize ice machine especially the plastic chute.

Observation: Debris build up underneath equipment (side of ice machine, behind cooking area, dishwashing area). Ceiling vents and ceiling tiles between the cooking area and dishwashing area had dust acummulation.
Garbage/recycling area had debris on the ground.
Corrective Action(s): Cleaning required in areas that are hard to reach and some hidden areas. Remove dusts onthe ceiling vents and ceiling tiles. Garbage/recycling area requires power washing to revove debris.

Hand wash stations provided with liquid soap and paper towels.
Quats sanitizer measured 200 ppm or greater.
Walk-in cooler was at 1-3 deg C. Walk-in freezer was at -18 deg C. or colder.
Prep line coolers registered 4 deg C or colder. Prep line freezer was at -18 deg C.
Hot holding for soups/gravy was above 60 deg C.
Temperature log was available and up to date.
Low temp dishwasher had chlorine residual of >50 ppm at plate surface.
All foods stored in the walk-in cooler were covered.
Food and food-related items were stored off the floor.
Kitchen staff were wearing clean uniforms and hair restraint.
