Comments

- Prep cooler was being repaired at time of inspection; operator has installed a new compressor. No food was stored in this cooler; all inserts from this cooler were stored in other sliding glass door cooler - good.
- Prep cooler was turned on and reached 4C by end of inspection.

- All hand sinks were easily accessible and properly equipped with hot and cold running water, liquid soap, and paper towels
- Sanitizer solution available in buckets. Solution slightly too strong - ensure to mix only 1 oz bleach with 1 gallon of water. Reminder that bleach sanitizer solution must be changed every 2 hours or sooner if visibly dirty.
- Only a small portion of bean sprouts were kept out at room temperature. Ensure bean sprouts are submerged in the ice water.
- Ventilation hood has been cleaned
- Ice machine has been cleaned - ensure to clean and sanitize on a regular basis to prevent growth of mildew/mould
- Walk-in cooler organization OK. Raw meats were below ready-to-eat items. Continue reorganizing to maximize space and keep food off the floor.
