Observation (CORRECTED DURING INSPECTION): Wiping cloths are not being properly stored in a sanitizer. Too many cloths noted.
Corrective Action(s): Wiping cloths are required to be stored in a sanitizer at all times. Limit the number of cloths being used at any time.

Observation: Front display doors do not appear to be closing properly - attention required.

Comments

- Temperature Control: Monitoring is required to be conducted. Gauges are noted!
- Mechanical Dishwasher: High Temp. - Ok.
Ensure all food contact surfaces are washed and sanitized after use and/or in a timely manner.
- Wiping cloth storage: Refer to Violation Notes. Previously noted!
- Food Storage: Front display items stored behind plexiglass are to be removed nightly. Recommend providing covered displays. Air flow in prep line appears to be blocked by large plastic biins in upper shelves - repostion to ensure consistent flow throughout refrigerated display unit.
- Sanitary Facilities: Ok
- Chemical Storage: All items are to be stored in designated area, separate from food items. (ie: Coffee machine cleaner/scouring pads)
- Staff hygiene discussed.
- Sanitation: Cleaning of "hard to recah" areas is to be conducted routinely. (Ie: Under coffee maker/grinder, corners of flooring, kitchen cabinets, etc)
- Pest Control: Monitoring is required to be conducted.
- Structurally: Facility is to be kept in good repair. Continue efforts to keep all surfcaes - smooth, tight and impervious to moisture.
- FoodSafe: Copies of certificates are required to be kept on site at all times.
- FoodSafety Plans and Sanitation Plans are to be kept on site for reference. Generic copy previously left on site.
- Health Permit is to be posted on site.
