Observation (CORRECTED DURING INSPECTION): hot water supply not available at the beginning of inspection. Facility's hot water tank is not adequate for supplying hot water for manual warewashing AND approximately the hour after
Corrective Action(s): Ensure that hot water is always available in adequate supply for sanitary maintenance. This includes handwashing, manual warewashing, etc.
Operator will be required to install new hot water supply system that can accommodate facility demand should hot water supply issues be observed in future inspections.

=Upright cooler (3C), prep cooler (2C), white domestic cooler (4C), and cake display cooler (4C) measured < 4 degrees C
=Upright freezer measured -10C and top of domestic cooler measured -11C
=pulled pork hot holding (69C), beef hot holding (76C) measured > 60 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method, 3rd compartment filled with sanitizer measuring 100 ppm chlorine
=Bleach sanitizer solution approximately 100 ppm chlorine available in spray bottles
=Minor amount of rodent droppings noted behind linen basket and high storage shelves. clean area on a more frequent basis.
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
