-Ensure that a bleach ( 1 tsp per liter) or quaternary ammonium (200 ppm) solution is used for sanitizing food contact surfaces, not Clorox.
Hand sinks supplied with hot and cold water, soap and paper towels.
Pest control is coming onsite monthly. Ensure that they are sealing any holes found and placing bait for cockroaches.
Dishwasher final rinse cycle reached 71 C at the plate level.
All coolers were < 4 C.
All freezers were < -18 C.
General sanitation was satisfactory.
