Observation (CORRECTED DURING INSPECTION): Pasta and lasagna noodles stored at room temperature, 14.1C. Cook put back into cooler during the inspection, limited quantities out to be used up in less than 2hrs.

Observation: Dishwasher does not have any chlorine, at 0ppm.
Operator left during inspection to pick up some, thank you.
45C wash cycle, detergent available.
Corrective Action(s): Please use test strips available to ensure you reach 100ppm chlorine for dishwasher. Redo utensils that were washed today without sanitizer.

Observation: Operator not using sanitizer for food prep surfaces during/before/after food prep.
Sanitizer available for front end but at 400ppm QUAT.
Milk crates stacked near food prep area have grime and debris and black mold corners.
Dish racks have black grime.
Corrective Action(s): Dilute santizier to 200ppm Quat (half) and use for food prep surfaces. Use according to instructions on the bottle.
Scrib and clean equipment and surfaces such as the dishracks. Milk crates - if not being used, remove them from food prep area. If being used, scrub and clean them before storing food.

Observation: Counter behind hand wash station near grill has duck tape around corner where sealant should be. Counter is showing age, chipping and in poor condition, difficult to clean surface.
Cardboard boxes used to store food and under food prep counter are discoloured and not in good condition.
Corrective Action(s): Remove tape and repair corners with cleanable surface.
Counter needs to be repaired or replaced with cleanable material.

Hot holding unit with rice at 60.7C
Ham in line prep cooler top at 8.1C but operator said it would be used in 1-2hrs and is using temperature as a control. Please continue to monitor and use up or discard after 2hrs.
Washrooms generally clean and well supplied with soap and paper towel.
Separate serving/cash and cook staff.
