Observation: Pest issue still on going. New pest control company is now monitoring the issue.
Corrective Action(s): Continue with addressing the pest issue by working with the pest control company.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some areas still need some attention with cleaning such as dishwashing area and behnd cooking area. Operator is still looking for a steam cleaner to remove grease build up stuck on equipment and to remove grime and filth on the floor etc.
Corrective Action(s): Clean different areas on a regular basis by rotating schedule (i.e. one week fume hoods, next week dishwashing area, weekly power washing the floors, etc.). Provide an updated cleaning schedule that will address all the different areas and that it is done regularly and documented.

Comments

Fume hoods, walk-in cooler shelves and walls, as well as ice machine have been cleaned since last follow up.
New pest control company is now monitoring and addressing the pest issue.
Operator provided copy of the pest control company report.
Some tile work has been done in the frying area and also by the mop sink area.
These areas are scheduled to be cleaned to remove excess grout stains, etc.
Item to address for next week:
Dishwashing area, behind equipment (power washing to remove grease)
Continue to remove milk crate and replace with proper washable containers
Provide more plastic containers with lids for pasta and flour in the dry storage area
