Observation (CORRECTED DURING INSPECTION): The sanitizer in the spray bottle was at 50ppm. A wiping rag was stored on the counter by the front handsink.
Corrective Action(s): Refresh the sanitizer spray bottle more often. All wiping rags must be stored inside the sanitizer bucket.

Observation: REPEAT OFFENSE: Soup temperatures are not being recorded. There is no spot on the Temperature log to record hotholding temperatures.
Corrective Action(s): Follow-up with Head office to see if there are new Temperature logs with a column to record hotholding temperatures. Otherwise, come up with your own system to record soup and other hotholding temperatures daily.

-Front handsink and back 3-compartment sink are fully equipped.
-All other temperatures are being recorded except for the soups.
-At least one staff on duty has FS level 1 certification.
