Observation (CORRECTED DURING INSPECTION): Hot water not available at the time of inspection 13:50. Operator indicated that the 3 compartment sinks were filled for warewashing and hot water supply had been depleted
Corrective Action(s): Restored by the end of the inspection 14:40.
Hot water tank is not appropriately sized for operational needs as seen in inspection on January 2023.
Operator to replace hot water tank with on demand hot water supply. due 12 months

Observation: Numerous live and dead cockroaches noted in sticky traps in the kitchen. Cockroaches were not observed outside of traps in the facility. Operator has set up their own glue traps and pest control service has applied some cockroach bait.
Corrective Action(s): Ensure that high activity areas are reported to pest control service and more bait is applied to eliminate pest infestation.

=Handwash station stocked with liquid soap, paper towels, and hot/cold running water at the end of the inspection
=Upright cooler (4C), prep cooler (3C), white domestic cooler (4C), and cake display cooler (4C) measured < 4 degrees C
=Upright freezer measured -7C and top of domestic cooler measured -14C
=pulled chicken hot holding (78C), black bean hot holding (69C) measured > 60 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method, 3rd compartment filled with sanitizer measuring 100 ppm chlorine
=Bleach sanitizer solution approximately 100 ppm chlorine available in spray bottles
=Minor amount of rodent droppings noted behind equipment and other hard to reach areas. clean area on a more frequent basis.
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
=Staff hygiene satisfactory at the time of inspection; operator FOODSAFE level 1 certification verified to be valid to Jan 2029.
